Gumbo

Wow, didn’t know that you could make Gumbo with ground beef in the microwave!
And all in 10 minutes!
Ground Beef Gumbo
- 1 lb lean ground beef
- 1/4 cup chopped onion
- 2 tablespoons chopped green pepper
- 1 can (10 3/4 ounces) chicken gumbo soup
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 2 cups hot cooked rice
Combine beef, onion, and green pepper in 2-quart microwave proof casserole dish.
Cook on HI 6 minutes, or until beef is no longer red, stirring once during cooking.
Break up beef with fork; drain. Stir in remaining ingredients, except rice. Cover.
Cook on HI 4 minutes, stirring once during cooking time. Serve over rice.
Yield: 4 to 5 servings
